Birthday Waffles!! That’s totally a thing in our home. On your birthday, you get to select the food you’d like to eat, all day long. However, it’s tradition that your day start with waffles (usually chocolate chip), ice cream, whip cream, sprinkles, and maybe more chocolate. What always makes me happy is that everyone enjoys our waffles, even though they’re gluten free, dairy free, egg free, and vegan.
This year for The Papa’s birthday, I switched things up a little bit, and I’m glad I did. Well, that, and they had just had chocolate chip waffles a few days prior. He loves all things lemon and all things cinnamon. Since I already had the cinnamon part of his day mapped out, I created this brand new recipe for lemon waffles. What makes it extra special is that he really enjoyed them, and they were safe for everyone to eat together. Even the ice cream on top was freshly made and top 8 free so they could indulge together.
Hopefully these waffles will be remembered in all of their greatness because seriously, that stack looks SO good.
