Have you heard of a 4 day rotation? If you’re new to food allergies, you may have been told to be on one for the time being. Alternatively, you may be on a 4 day rotation because you have a complex situation. I’ve personally had to go through a 4 day rotation, as has one of our kids. It. Is. HARD. I made it a lot easier by creating charts, and from there, meal concepts and recipes that were allowed on each day of the rotation. That’s why at times, you’ll see us share a recipe that’s a little off the wall, like this one (it’s our way of trying to help as many people as possible). Truth is, I love this gluten free potato lasagna recipe, as do the kids. It represents freedom in our world. Here’s what I mean by that…
Let’s say you have a 4 day rotation and your carbohydrate for the day is white potatoes, but man are you craving lasagna. Well, let’s combine your carbohydrate and protein for the day and get really creative. If you’re in the midst of a 4 day rotation, this recipe can work with any ground meat of your choosing.
If you’re big into meal prepping, you could plan ahead and freeze portions of this meal as well. Better yet, bake individual portions in glass containers, then freeze them in the baking dish 🙂 I love to do this for my food. Less dishes.
