Traditionally, chicken curry uses a lot of butter/oil/cooking fat, so today, you’ll be using your pressure cooker to make a delicious soup that doesn’t require an added fat.
Fun Story
Kid Four HATES warm fruit (even pie). She thought the apples were potatoes. Kid Two thought this as well. They both added that this soup is perfect in its own way. The salt is perfect, seasonings are balanced, right amount of sweet, everything just works, and its very warm and satisfying.
I call this a HUGE victory!
