When I learned about Mexican mole years ago, I added it to my incredibly long to-do list and the day has finally come where I can share the results. It was so exciting to have time to dive into Mexican mole, and see how to make a version that’s very allergy friendly. Now, if you didn’t know this, the word mole (from Nahuatl mōlli) means sauce. So you say “mole” rather than “mole sauce” which means “sauce sauce”. Whilst that isn’t a hard and fast rule, at least you’re in the know now.
One last fun note, it’s not uncommon to have cacao in a Mexican mole, so get ready to have some fun!
