When I learned about Mexican mole years ago, I added it to my incredibly long to-do list and the day has finally come where I can share the results. It was so exciting to have time to dive into Mexican mole, and see how to make a version that’s very allergy friendly. If you’re not sure what to pair this delicious sauce with, check out this Simple Pressure Cooker Pork recipe (gluten free, top 9 free).
Now, if you didn’t know this, the word mole (from Nahuatl mōlli) means sauce. So you say “mole” rather than “mole sauce” which means “sauce sauce”. Whilst that isn’t a hard and fast rule, at least you’re in the know now.
One last fun note, it’s not uncommon to have cacao in a Mexican mole, so get ready to have some fun!
