Can we just take a moment to stop and appreciate what this cookie recipe means… In addition to being top 8 allergy free, these cookies are gluten free, AND corn free. There are a lot of little things you can do to change them as well (looking at you delicious lemon cookies in the freezer). Oh, and did I mention they freeze amazingly well? Basically, we should just call these miracle cookies. And the texture! Oh it’s so amazing, and I’ll never forget the first day I made them.
