After a week of cooking up all sorts of delicious gluten and dairy free recipes, I had some odds & ends and wouldn’t you know, the melding of flavours was well received. Consider this more of an inspiration of how you can take what you have and make something awesome. I will also add, this is almost a play on Spanish rice.
In the case of most of my ingredients, they were already prepped from other meals earlier in the week, making this a very FAST meal. Friends, never underestimate the power of food prep. 🙂
