As many of you know, I am NOT a chocolate fan. However, knowing that there are a lot of readers who do enjoy it, and also happen to love these Tiger Nut Muffins, I thought it would be good to create a chocolate version.
Remember, tiger nuts are not tree nuts, but poorly named tubers (root vegetable). Read more about them here.
These gluten free chocolate muffins pair really well with this raspberry jam recipe. Alternatively, if you have a tasty jam on hand that will pair well with chocolate, give it a go.
For those managing the kind of diet that has them leaning into the ingredients used today, I’d encourage you to think of this as a muffin recipe that can pull double duty. You can easily call this a chocolate cake recipe and jazz it up with this paleo frosting recipe. You can also add safe for you chocolate chips (or melt it down and make a ganache), top with maple butter, or anything else that screams dessert to you.
Use this cake 😉 recipe for holidays, birthdays, midnight snacks, and anything else that serves you well.
