Sometimes, it dawns on me that there are things Kid Two has never eaten, and probably never will unless we make it ourselves. Gluten Free Dairy Free Enchiladas is one of those meals. I will say this up front: these are time intensive because you have to make the base sauce, then the enchilada sauce first.

Was it worth it? Totally. Kid Two (and everyone else) really enjoyed the experience. Will I do it again? Nope. I’m letting the kids work together to make the next batch since they’re old enough and know their way around the kitchen.

I will say this though: this is a freezer friendly meal. If you LOVE enchiladas, I would encourage you to make a double or triple batch and freeze the leftovers into single-portion sizes. Yeah… think of this like lasagna. Lots of steps, plenty of time, and delicious results. Yet, you kind of wish you could just skip to the end and have lasagna ready 🙂
