It’s another gingerbread cookie recipe for you! What makes this one special is that it’s a corn free gingerbread cookie. If you’re new to living with a corn allergy (or know nothing because you don’t have one), corn is EVERYWHERE.
Corn goes by hundreds of different names and is used liberally in the food, medical, and industrial worlds. Since I personally know what it means to live with a severe corn allergy, when I create corn free recipes, I make sure they’re free from corn derivatives.
If you read the gluten free vegan gingerbread cookie recipe, you’ll notice some overlap. That’s because I keep as many corn free ingredients in the house by default so I can keep crafting recipes for others. In this corn free recipe, the dairy free butter is exchanged for shortening.
That’s because corn is used via derivative in dairy free butters. I also opted to change up the flours for this recipe, as it’s not uncommon for those allergic to corn to also be allergic to oats.
