As some of you may know, our home is a mixed allergy home. It means that almost everyone has food allergies, intolerances, or requires a special diet, none of them the same. It can be a HUGE challenge making foods that everyone CAN eat together, and ENJOY. For example, The Papa simply can’t tolerate dairy free cheese (and I don’t blame him). It can be a bit of a shock, especially if you don’t need/want it. He’s more OK with Gouda and Parmesan, but overall, he passes on (dairy free) cheesy things. Everyone else- they love it. I say all of that to say this: The Papa didn’t tell me this, but he wasn’t super happy about our waffles in general. I thought everything was fine in that department, but as it turns out, he was missing the waffles that he eats at church on Sundays (they do a waffle breakfast). That all changed when I made these waffles you’re about to read about. He said that these were amazing, just as good if not better than the ones at church. That meant a lot to me, because I knew he wasn’t being nice for the sake of the kids. I suspect part of the reason he enjoyed them was the cane sugar. We usually use maple sugar because of our low/no sugar kid. He also LOVES strawberries, so that was a huge help. This is totally a “treat” waffle around here, but awesome none-the-less.
