I just love making Paleo, AIP, and other special diet friendly treats. All too often Paleo cookie recipes call for major allergens such as tree nuts or eggs. The same goes for other meal categories. We know that there are people in the food allergy community that want/need to go grain free and those who are grain free that may have an allergy as well. Hence, Paleo Gingerbread Cookies. In addition to being Paleo, these gingerbread cookies are also corn free, top 8 free, vegan, gluten free, and AIP compatible. Don’t you love it when so many people can indulge together? We sure do 🙂
