The focal point was frugal meals, and the numbers are promising. When I ran the numbers, I realized that for less than $20, I was able to craft three delicious allergy friendly recipes which yielded a combined 12+ servings. Not bad for a $20. Today I’m sharing the most popular version of the three: Red Sauce Beans & Rice. (2020 Monday Night Live Episode featuring a play on this recipe) Curry Beans & Rice Recipe  |  Creamy Beans & Rice Recipe Allergy Status Free From: Wheat/Gluten, Dairy, Egg, Soy, Tree Nut (including Coconut), Peanut, Fish, Shellfish, Top 8 Allergens, Sesame, Apple, Avocado, Banana, Berries, Buckwheat, Carrot, Celery, Cinnamon, Citrus, Corn, Cruciferous, Garlic, Lupin, Mushroom, Mustard, Oat, Pea & Pea Protein, Potato (Nightshade Variety), Poultry, Red Meat, Seeds, Squash & Gourd, Stone Fruits, Strawberry, Sweet Potato & Yam, Tapioca/Cassava/Yuca/Manioc, Yeast Friendly To: EOE, Vegan Compatible With: Grape Free, Cane/Refined Sugar Free Cane/Refined Sugar Free: Use organic maple sugar in place of brown sugar. Coconut sugar and date sugar would also work well. Grape Free: Swap the balsamic vinegar (grape derived) for a flavourful vinegar you enjoy. Freezer Tip: Beans and rice freezes well. For best enjoyment, thaw your food completely, then reheat on the stove top. Reheating in an oven/toaster oven is not advised. The company I spoke with (Lazy Kettle Brand) are totally top 8 allergy free, and in theory corn free. However, if the wood has been treated/washed/etc., you may have a corn derivative involved. Directions Prior to cooking your beans, you’ll need to have rice prepared. I opted to cook a total of 6 cups of brown rice, and split it among the three recipes. Start by heating a large pan on medium-high heat. Add your cooking oil/fat and allow it to heat. In this case, I used bacon drippings for extra flavour, however, oil will work well.
