Directions You can watch the video above to see it all in action. Start by preparing all of your veg. On the tomatoes, I opted to remove the juice and seeds from about 25% of the pieces. You want some of the juice there for the cooking. Place all of your veg into a large roasting pan. Add the oil and salt, and mix everything together very well. Place your roasting rack on top of the veg (it’s OK if the rack is touching vegetables). Place the chicken on top. Sprinkle HALF of the rub ingredients on the chicken. Rub very well. Flip the chicken over and sprinkle on the other half. Rub again. Cook at 425f/218c for 40 minutes. Flip your bird over and cook for an additional 40 minutes. Carve and enjoy. Can I Use Less Vegetables? Absolutely. I would aim to keep the ratios the same if possible. The first time I made this, I used less of the veg.
