As I continue to plough through winter, I’m always looking for new ways to incorporate hearty root veggies. Today’s recipe is comforting in its own way, nutritionally dense, and a tasty way to share curry with kids. If you’re a fan of Meatless Monday, this is an awesome vegan dinner recipe your family can enjoy together. It’s also good other nights of the week. Oh! It’s also a great leftover for lunches 🙂
