Wow, OK, here we go. Buckle up because we’re tossing out the rule book and making a tiered gluten free cake that WILL NOT collapse! If you’ve seen the Allergy Inspiration video where we share the 18 layered cake, you may know that the cake looked great. Once we cut into it… let’s just say… it had seen better days.
However, fast forward to this past Christmas, and we made a VERY tall Christmas Tree cake. I think it was 8 layers? There was ZERO collapse, and in that moment, I had finally figured out how to pull it all together.
