Wow, OK, here we go. Buckle up because I’m tossing out the rule book and making a tiered gluten free cake that WILL NOT collapse! If you’ve seen the Allergy Inspiration video where I share the 18 layered cake, you may know that the cake looked great. Once I cut into it… let’s just say… it had seen better days.
However, fast forward to this past Christmas, and I made a VERY tall Christmas Tree cake. I think it was 8 layers? There was ZERO collapse, and in that moment, I had finally figured out how to pull it all together.
Today I’ll be showing you how you can successfully make a tall free-from cake that will withstand cutting and serving.
