This is one of many tortilla recipes we’ll be sharing in the coming months. Today we’re featuring oat flour, specifically for those who can only have oat flour. Like coconut flour, oat flour interacts with water differently than other pseudo-grains. We’ve included notes on that below.
We’ve also included a version of the recipe that uses tiger nut (tuber, NOT a nut) for those who can have that as well. It adds a little extra flavour to your tortilla.
When making free-from tortillas, I LOVE having an electric press. It both flattens and cooks the tortilla at the same time. With my press, I use parchment paper to make clean up just about non-existent.
