Pumpkin Cookie Recipe (Corn Free, Gluten Free)

Corn Free Pumpkin Cookies by The Allergy Chef

It’s Pumpkin Everything Season, also known as October 1 – November 30 🙂 There are an infinite amount of things you can do with pumpkin, so this year we are sharing pumpkin recipes that are out of the ordinary. Today I’d like to share with you corn free pumpkin cookies. These pumpkin cookies are also gluten free and refined sugar free. Now, if that’s not enough, here’s what makes these cookies extra special to me: they’re low histamine and AIP friendly.

If you’re not familiar with low histamine, one of the ingredients omitted is vinegar, which is allowed on AIP. On AIP, one of the ingredients eliminated is white potato, which is in our baking powder. I’m sure you can see where this is going… in order to create a recipe that was safe for many diet types to come together, we had to get very creative with our ingredients.

Fun note: we’re thinking these should officially be called Pumpkin Churro Cookies given their shape. Once you’ve made them, let us know what you think. So, go forth and create safe and delicious pumpkin cookies.
