We’re headed into pink season (Valentine’s Day)! Each year I like to think about fun ways to create pink food. This year, I’m sharing beet cookies and beet muffins with you. I think this recipe is a clever way to include vegetables, but still have an awesome food experience.
The Papa does NOT like beets. At. All. He really enjoyed these muffins. The kids would like to add that they really enjoyed the hidden chocolate chips at the bottom.
