I learned SO much about meatball making during this fun recipe series. Here’s a takeaway I really want to share with you: not everything you make will be served in the way you originally intended. When I made seven (totally out of the ordinary) meatball recipes, I thought for sure this one would be a hit.
Turns out, most of the meat + fruit combinations didn’t fly with the kids. I however did not want to give up on this particular recipe because let’s face it, dairy free cheese is expensive. With that in mind, I took the Blueberry Parmesan Meatball mix and cooked it on the stove top.
Then, used it as a topping like “chili cheese fries” but meatball fries? Is that what we’re calling them? You get the idea. Add fries and extra cheese, and suddenly, everyone was fighting over who would get the last bite. I kid you not…
