These gluten free gingerbread pancakes are perhaps The Papa’s favourite winter time breakfast. Well, maybe third, after the apple pie waffles and pumpkin pie waffles. He is a big fan of gingerbread and all things cinnamon, so these pancakes are something he really enjoys. What I love is that the pancakes are also gluten free, vegan, AND top 9 allergy free. It means everyone can enjoy them together.
I’ll also add, whilst this recipe does contain cane sugar by way of molasses, it’s still a refined sugar free recipe, as molasses is an unrefined sweetener.
