Before you jump in today, I can’t say that this recipe works in an Instant Pot, at least, not the one I have (Duo Plus). I’ve had an issue with several recipes, mainly where beans are involved. It causes the Instant Pot to have the food burn error.
Now, in my case, I have two pressure cookers. The older one has a true nonstick lining whereas the Instant Pot is fully metal (one of the reasons I bought it). For each recipe that burns in the Instant Pot, if I transfer it to the older pressure cooker, everything is fine.
Now, if you know that your Instant Pot can handle beans without burning, proceed. If not, skip this recipe and try something else from the pressure cooker collection. Alternatively, you could put these ingredients into a Dutch Oven or oven safe pot and bake in the oven until the chicken is done.
Note: Photoed, I served this over rice, but you can serve this with any carb. You can also eat it standalone.
