More safe corn free ice cream? Yes please!! As you know, I lovvveeeee ice cream, and this is simply too delicious. And now I can tell you: IT’S FINALLY HERE!!!! So fun fact, we’ve been sitting on this amazing corn free recipe for just about a year. But, before you get upset, here’s the reason why: we couldn’t get it right. This is one of those recipes where I made it the first time, mostly just “goofing” around in the kitchen, and it was the most amazing thing EVER. Hands down, it was like nectar from the gods. The problem was, I couldn’t replicate it. Cue the super sad music.
Each time I received a new case of corn free avocado from our very special farmer, Will’s Avocado (Brokaw), I’d try to replicate it, but alas, it was always just out of reach… until now. A couple of months ago we got it right. Then, we made it even better (I know, right?!) and after several tests to make sure the numbers were right, we can finally share the most amazing recipe ever with you. In my book, this truly is THEE best recipe we’ve ever created, followed by all of the recipes we use for the bakery, and the corn free cake-muffin recipes we recently shared (view them on Easy Cooking Videos).
For those of you who are corn free, make sure you’re sourcing safe avocado. That’s the only way this recipe was possible for us, thanks to the wonderful Will of Brokaw Avocados. Eventually he plans to ship again, and hopefully that day comes soon. Until then, check sites such as localharvest.org to see about finding a farmer who’s willing to help you.
Now if you think I’m exaggerating about the taste, I’m not. One of our kids, who can have dairy and sugar, says this is her most favorite ice cream of all time. She’s officially been branded my ice cream buddy, and she and I eat this by the truck load, well, case load. The fat from the avocado lends so much creaminess to this recipe that you’d never guess it were free from dairy. What I also love is that it’s not a science experiment. It freezes, it’s great as pudding, and honestly, I just can’t say enough good things about this recipe. SO, I’m going to stop tying now so you can all watch the video.
