That’s because they’re purple sprouts which look SO cool before they’re cooked. Know that once they’re cooked they will loose a good amount of their colour. The novelty of the colour is still fun if you ask me. You can use fresh or frozen sprouts for this recipe. Let’s get cooking! It can be breakfast, savory, sweet leaning, or even homemade. I’ve included a picture of the one I used (I bought it at Costco). For those who like to prep in advance, the sausage and veg can all be prepared (up to) a few days in advance. Directions Start by preparing your produce. For the sweet potatoes, peel them, then cube them. Aim for a medium dice. Next, dice your onion (you’re going for a small dice). There’s a video linked above if you’re new to cooking. If you’re prepping fresh Brussels sprouts, start by cutting the hard end/stem off. Then half or quarter each sprout. Now that the veg is prepped, heat a large/deep non-stick pan on high heat (8/10 for me). Add your cooking oil and once it’s hot, add the onion, sweet potatoes, sprouts, and 2 teaspoons of salt (Part 1 Ingredients). Cook for 10 minutes. Whilst the veg cooks, prep your sausage. Slice it into rounds. You can quarter if you’d prefer, but that’s a lot more slicing. During the cook time, your oil will evaporate. Add the next 3 Tablespoons of oil (part 2 Ingredient). Continue to cook for 7 minutes....
