Do you know there’s a recipe to-do list on my computer? I’ve had this on my list for months and it’s something I’ve been excited about. I finally had some free time to mess about and the results were AMAZING. The kids and The Papa were in love with this. I wanted to tweak it but they said NO. Under no circumstances was I to change this recipe because it was perfect. There’s so many flavours that come through, the texture is perfect, and the sauce I paired it with was bomb dot com.
This chickpea patty, in my head, was originally going to be a mock tuna salad. Somehow it morphed into fish cakes and I’m glad it did. These vegan patties have brought so much joy to the kids I’m just plain shocked. But get this! I received the ultimate compliment from Kid Two. When he first sampled the patties, he thought the sauce was homemade and the patties were store-bought. He said they were THAT good. On to the recipe!
