It’s time to make an allergy friendly apple pie cake that’s SO fun to look at. This easy vegan project features apple pie filling, gluten free pie crust, and vanilla cake. If you need a good cake recipe, here’s my favourite Gluten Free Vegan Cinnamon Cake Recipe (I made it as an upside down cake). You can use that cake base or your favourite vanilla cake recipe.
For frosting, you can use either a vanilla cream cheese frosting (what’s in the photo) or a vanilla buttercream frosting. Both of the recipes I’ve linked to are gluten free, vegan, dairy free, and more. The buttercream frosting is top 8 allergy free and the cream cheese frosting will contain at least one major allergen depending on the brand you choose.

The Magic Behind This Apple Pie Cake
I’m SO excited to show this to you because we’re going to have all the best parts of pie and cake together. There won’t be a bottom crust, but the top crust will look nice. Should you LOVE embellishing your pie crusts, you can use mini cookie cutters to make shapes such as leaves to decorate the outside of your pie crust.
The real magic of this cake: It’s EASY!! And it’s a bit of a statement cake too. In the video, I’ll be making my cake 3 layers high, however, you can pull this off with one layer of cake too. The visual advantage of a 1 layered cake: it looks more like an authentic apple pie. In my case I really wanted CAKE to be present too.

I’ll be making my own gluten free vanilla cake. Any tips?
Yes! First, make sure you have a good gluten free flour blend. If you’re new to gluten free baking, consider using a cup-for-cup style flour. It’s essentially an all purpose flour. This article will help you understand more about flour.
Bob’s Red Mill sells a load of gluten free flours to choose from, all from a dedicated facility. However, if you buy his GF flour, know that the equipment is shared with other allergens. This is why I make so much from scratch and show you how to make custom blends with each recipe.
My gluten free cakes seem to come out a little flat. Any advice?
It sounds like you may be gluten free and egg free. If this is the case, you’ll need to make sure that your egg substitute is providing lift. There’s more about that in this How To Make a Flax Egg video.

Will this work with chocolate cake?
I don’t suggest it, unless you know you love the taste of apples and chocolate together. Personally, I’d go with a vanilla cake, cinnamon cake, spiced cake, or carrot cake. These would all pair well with an apple pie recipe.
