Raise your hand if you love easy recipes! I know I sure do. This no-bake cookie recipe is gluten free, vegan, top 8 allergy free, refined sugar free, nut free, peanut free, and corn free. I honestly don’t think we could ask for more in a recipe.
OK, time for a little real talk. These days, junky ingredients are everywhere. It can be hard to create food that’s safe AND delicious AND nutritious. It’s something that I’m personally always working around given the needs of my household. ‘ve also decided recently to have ALL of my kids go Low/No Sugar like Kid Three for various reasons.
Whilst I don’t talk much about my personal choices, know this: I am big into organic, non-gmo, and all natural eating. Quietly, I study a lot about health, wellness, nutrition, and more. I really don’t like purchasing packaged snacks and treats. I can say there are a few brands I like to support, I’m just not a fan of processed foods. My general rule is: if I can make it at home, I won’t purchase it unless I NEED to save time. Even then, I select the cleanest options available.
I DO talk about a lot about food allergies, but here’s what I should say a little more often: people with food allergies, autoimmune issues, food sensitivities, and other health problems should really make sure they’re putting clean food into their systems. That doesn’t mean you can’t have treats. It means you need to be mindful of what you purchase, or make it at home yourself.
With all of that said, I wanted to share with you today an awesome No-Bake Nutrient Dense Cookie Bite Recipe. Each of the six simple ingredients are loaded with vitamins, minerals, and delicious nutrition. You can take all of the ingredients and put them into your food processor for easy no-baking.

- 170 g Organic Sunflower Seed Butter, Unsweetened (6 ounces)
- 100 g Organic Tiger Nut Flour (tuber, NOT a nut)
- 100 g Organic Maple Sugar

Directions
It’s so easy, you may be able to make these in your sleep 🙂 Combine all of your ingredients in your food processor and mix until smooth. Use a small or medium cookie dough scooper to portion out your cookies. I opted to shape these like a traditional cookie, then use a fork to create imprints (like a peanut butter cookie).
