That title sure is a mouthful, but you won’t mind when you have a mouth full of cookie. Did you happen to see yesterday’s Corn Free Pumpkin Cookie Recipe? It was very tasty, but I also wanted to create a pumpkin cookie for those of you with different restrictions.

As you know, it’s currently Pumpkin Everything Season, and I wanted to create something you don’t see everyday: a Pumpkin Oatmeal Cookie. So why the chocolate chips? I’d ask, why not the chocolate chips?

If you’re new to using pumpkin in cookies, know that it adds a lot of liquid to your recipe, so don’t be too surprised when you see the amount of dry ingredients that go into this recipe. Beyond that, the cooling period is important in this recipe, so have patience and don’t skip it (I wish you all the luck in the world with that).
