As many of you know, I must adhere to a strict, truly free, corn free diet. Finding corn free food and corn free recipes can be very difficult in today’s world. I’ve personally found that unless the author has a severe corn allergy, the recipe often has items that are usually contaminated with corn. I suppose that’s what makes me special…

With that in mind, each time wIe create a corn free recipe that’s delicious to the taste testers, it means I have a real winner on my hands. This is one of those recipes.

My corn free recipes usually start with me trying to create something for myself, then “forcing” everyone else to sample it, hehe. When everyone came to sample these, they ate all of my pancakes. Not quite sure how I feel about that…

So, Let’s Talk About Tiger Nut Flour.

Have you ever had tiger nut flour? If not, let me try to describe it to you, especially when compared to cassava flour. Cassava has a weird fruity after taste in my opinion, and it’s “thin” in a potato/arrowroot starch sort of way. Tiger nut seems to have more body to it, and it looks almost like hazelnut flour.

It isn’t a tree nut or legume, rather, it’s part of a tuber. There’s a certain thickness that it brings to the table that I feel works really well with the cassava flour. In terms of price, I think the two are about the same. The tiger nut that I purchase from Organic Gemini may be a little more, but it is organic, which I always prefer. Now, on to the real reason you came, the pancakes.
