When the idea of a vegetable loaded pasta sauce first came to mind, Chef Boyardee was no where to be found. I was so happy to create a sauce that resembled something most kids would be willing to try, but also something most parents would LOVE to serve. However, when sampling time rolled around and The Papa was nearly giddy to tell me that it tasted just like Chef Boyardee, and of course I was a little taken back. He was quick to reassure me though, that it was indeed a GOOD thing.
So, if you have kiddos that might like that kind of taste (not that I can tell what that taste is exactly), this is a great recipe to try. It’s also a fantastic recipe if you’re looking for a way to naturally add more vegetables to your rotation.
When you see all the veg and vibrant colour in this recipe, I hope you smile as you pull things together. I sure did. Full warning, there are a lot of ingredients and prep today, so make sure you have time before starting on this recipe.
One last share: I’m super excited to tell you that this vegan pasta sauce is celery free AND completely added sweetener free. We’ll be using squash to bring a natural sweetness I think you’re going to love.
