If you don’t feel like making this fresh, Daiya, and several other brands, now make a gluten free and dairy free box of Mac-N-Cheese. I haven’t tested most of them out simply because I like to make things at home.

Cheese Options
Since publishing this book, there has been an explosion of options in the dairy free cheese sector. There are even top 8 allergy free options now. Never did I think I’d see that day! So, choose which brand will work best for you. The ratios will still be the same.
Know that your cheese will change the allergy status. For example, you can have cashew based but nightshade free. Or top 8 free (Oatzarella) but it will contain oats. I’ll also add that Follow Your Heart has removed the coconut from their parmesan shreds, so that’s an additional top 8 free option.
