Gluten Free Vegan Spinach Muffins by The Allergy Chef

So… a gluten free muffin that’s better for you and tastes SO GOOD that Kid Four was gobbling it up and took a second right away… Yeah… this is a total winner and you’re going to have to make it ASAP. I did use chocolate chips in our muffins, but this is optional. You know your kids and what it will take for them to dive into a green muffin which I personally like to call Hulk Muffins.
