I hope you’re all ready for another delicious cookie recipe. Can you tell we’re fans yet? 🙂 Today’s gluten free oatmeal cookie recipe can be made two ways: thick and thin. The kids say that if you make these vegan cookies on the thick side, they’re more cake like and perfect for an ice cream sandwich. Though, Kid Two prefers an open-faced sandwich for a better cookie to ice cream ratio. The thinner oatmeal cookie is perfect for eating straight.
Either way, the cookie is delicious, and freezes for four months so you can make a double batch and have them on tao for enjoyment whenever you’d like.
