Oh. My. Goodness. Just yes. Like, can we all stop and just appreciate what this corn free cupcake recipe really represents: True Freedom. Freedom from food restrictions, and always thinking you can’t have something. Corn free information online is hit-and-miss. Corn free recipes online are frustrating because if you don’t live with a corn allergy, it’s easy to think you’ve produced a recipe that’s corn free. I guess that’s the “beauty” of me. Living with a severe corn allergy use to be really hard (looking at you, day one). These days, it’s a breeze, and I’m at a place where inventing truly corn free recipes is just way too fun.
Fun fact: I hate cake. I’ve hated cake my whole life. As a child, I would eat the frosting and just take a little of the actual cake. Hindsight being 20-20, it’s probably because I’m allergic to everything and my body was trying to protect me. Even now as an adult, I still don’t like cake. Cookies? Awesome. Ice cream? Looovveeee. Cake? Pass. Every. Time… until now.

I don’t know if I can say that any louder but you guys, these little containers of joy are incredibly delicious, tender with an amazing crumb, and easy to make. We have yet to decided if these are more muffin than cupcake, so we’ll leave it up to you. We can agree that these tasty cinnamon muffin-cupcakes remind us a bit of a bran muffin. Also, these make a great base for carrot cake, and apple pie cake 🙂
Honestly, I just can’t say enough good things about these muffin-cupcakes. If you can’t have pseudograins (millet, oat, sorghum, etc.) these are free from those ingredients. They’re also nut free, top 8 allergy free, and more.
