As of late, I feel that I’ve had these moments where after creating something so incredible I feel that my work here is done. This friends was one of those times. Had you asked me the day I was diagnosed if I thought this was possible, I would have said absolutely not. This dairy free, gluten free, corn free ice cream cake recipe feels like a unicorn… It’s nothing short of amazing. What made this paleo-ish cake extra special: we all (myself included) ate it together. The kids were SO happy to have this delicious moment with me, then proceed to finish my plate for me because my eyes are always too big for my own good.
