Fun Fact: I didn’t know what the big deal was about mashed potatoes until this recipe. As a kid, there was a mashed potato that I ate that was pretty good, but only the one time. Our kids love our dairy free top 8 free mashed potatoes, but I couldn’t understand it. Now, NOW I understand the love of mashed potatoes.
Making mashed potatoes corn free and dairy free was the real challenge. Eliminating the other allergens wasn’t as “big of a deal” when I was thinking about this recipe. The reality is, you need a butter or shortening to pull this off.
However, you all know how much we love you RAISE Members, and there’s one member who can’t have shortening. With that in mind, I try to make sure that we’re creating delicious food that meets their needs too. Enter the best dang mashed potatoes ever.
