I’m so excited to share a recipe with you that honestly took a lot of work. This was one of the first dairy free, top 8 free pastry cream recipes I tried to invent and I went through 6 different versions before I felt it was really ready. What’s interesting about free-from pastry is how very small tweaks can make a big difference. In some of my versions of this recipe, there’s only a 20 gram difference in a specific ingredient.
Yet, that kind of tweaking, in my opinion, is the allure of free-from pastry. There’s something so satisfying about taking traditional French pastry and creating something comparable (without crazy ingredients) for people who normally don’t have access. OK, enough chatting, let’s get to work.
