Gluten Free “Peanut Butter” Marshmallow Cookie Bars Recipe (Vegan)

Gluten Free "Peanut Butter" Marshmallow Cookie Bars Recipe (Vegan) by The Allergy Chef

Get ready to make some very interesting cookie bars. Kid Two would like you to know that the marshmallows turn out chewy in a non-traditional-marshmallow kind of way, but that it’s super good.

If you don’t have a safe marshmallow, you can make the bars and top with chocolate, or try one of the many other cookie recipes here on RAISE.

Seed Warning: Botanically, buckwheat is made from the seeds of the buckwheat plant. Some people with a seed allergy are able to eat buckwheat whilst others aren’t.
