Flax Gel Ingredients 6 TBSP Golden Flax Meal 12 TBSP Water Dry Ingredients 90g Potato Starch 90g Sorghum Flour, superfine 80g Brown Rice Flour, superfine 65g Organic GF PP Oat Flour (you can swap for tiger nut flour if needed, tuber not a tree nut) 60g Arrowroot 350g Organic Maple Sugar 6 tsp Baking Powder 1 tsp Baking Soda 1.5 tsp Sea Salt Wet Ingredients 170mL/6 ounces Milk of Choice + 2 TBSP Organic Apple Cider Vinegar 225mL/8 ounce Organic Extra Virgin Olive Oil 250mL/9 ounces Hot Cold Brew Coffee Glaze Ingredients 60mL Organic Maple Syrup 10mL Cold Brew Coffee 13mL Coffee Extract Directions Combine your flax and water together in a small bowl and mix together. Set aside, then get your cold brew coffee into a pot and boiling. Use more than needed, as you will loose some to evaporation. Next, combine the milk and vinegar in a measuring cup and set aside. Finally, measure out the oil into a measuring cup. Your wet ingredient prep is now complete. This is a good time to preheat your oven to 350f/175c. Now, combine all of the dry ingredients into your mixing bowl. For cake, I use a stand mixer with the wire attachment. Once the dry ingredients are all in, lightly whisk to combine. With your mixer on low, add the milk and vinegar combo. Mix until just combined, then turn the mixer off and wait 1 minute. Now turn the mixer back on low speed and add your oil.
