Do you ever have a night where you need an easy dinner recipe? Who am I kidding? We ALL have those nights, several times a week I’m sure. That’s where the inspiration for this recipe comes from. Not every meal you serve has to be an elaborate display of culinary might. In the case of this tasty chicken recipe, it’s about simplicity, and the ability to plan ahead.
If you have a Costco in your area, I would encourage you to purchase your chicken there (we buy the organic one which is affordable only at Costco). Usually the day or two after shopping, I’ll take the time to pre-cut all of the chicken breasts and package them in freezer baggies and store in the freezer. In turn, that means that meals like these come together SO fast, as long as I remember to thaw the chicken.
