The Most Epic Grain Free Bagel Recipe Ever (Paleo, Gluten Free, Corn Free)

So. Epic? Perhaps that’s an understatement. Once you’ve made these, I’ll let you be the judge, but I’m guessing you’ll agree. I mean, come on, a corn free bagel… that’s also a gluten free bagel… that’s also a top 8 allergy free bagel… that’s also a paleo bagel… what other word should I use?

Now, before we jump into today’s story, I want to let you know upfront: if you’re not able to have the particular ingredients listed, substitution may be difficult, and possibly not an option.

This recipe was delicately crafted with just these ingredients in mind, and given the nature of the end result, you may have better mileage starting from scratch than tweaking this particular recipe.

So why bagels? The pagel incident of 2018 is what inspired this recipe, that and the fact that my good friend Laura from UmpalaRain was working on a top 8 free bagel.

Those of us with less-than-common allergies know the drill: an awesome recipe is created but sure enough, there’s something in it that we can’t have. What’s funny is that Laura is a lot like me: she creates delicious recipes for her family that she herself can’t eat. Her bagel is just one of those items.

So back to the pagel incident. Some clever ladies created a Paleo Bagel and then had their recipe “stolen” by a commercial use location… focus on those quotes. The “would-be-thief” claimed he did nothing wrong because his audience wanted something made for them, rather than their audience who wanted to make it for themselves. Did he break any laws? Maybe. Was it super shady? Absolutely.

After reading about the pagel incident, I got to thinking about bagels in general, and wondering if I could create one. I knew some bagel basics, but had to learn more about the process first. Which ingredients were critical, and the role they each played. I quickly came up with a game plan and got to making bagels.

The first rendition was good, as in, “Oh my goodness I haven’t had a bagel in over 10 years and this is great!” however I had a way to go. I learned the pitfalls of the recipe, and which parts I didn’t like and went back to the drawing board. After several tweaks, I can proudly say, this bagel recipe is drop dead delicious.

It’s everything I remember a bagel to be. The best part: the whole family LOVES them. It’s a big deal because it’s not too often the love my personal food. So, without further delay, I present you with the most epic bagel recipe you’ll ever read (for those of you with severe food allergies).
