Fun fact: This is NUT FREE. Can we all take a moment to mourn the fact that the humble tiger nut, a root vegetable, was given a terrible name? I try to make it a point to let everyone I meet know, that tiger nuts are indeed NOT tree nuts.

If you’re corn, dairy, and oat free, then tiger nuts are the item for you. I should know, hehe. I absolutely love tiger nuts, and making milk is SO easy with our NutraMilk (use the code TheAllergyChef50 so save $50). Tiger nuts are very hard, and most appliances won’t be able to process them. The NutraMilk does it without lifting a finger. Since we have access to milk, it means that making ice cream has never been easier.

Now, as many of you know, I’m a sucker for ice cream and cookies, so anytime I have an excuse to make them, I’m all over it. What always cracks me up about these alternative ice creams is that everyone in our house loves them. They don’t NEED to eat my ice cream, but they do… not sure how I really feel about that 🙂 I say that to say this: inclusion is something that we take for granted.
