As some of you know, I was recently certified in French Pastry and let me tell you: it was no walk in the park. On principle, the work was not difficult at all. However, me being me, I made it a point to ensure that each assignment I completed was gluten free, vegan, top 9 allergy free. I also made pastry corn free where possible.
Why? Simple: that’s the core of what I do. Through my courses I was able to reinvent traditional French pastry to make it free-from and that friends is a HUGE victory. You’ll find over the next few months we’ll be sharing the fruits of my labor and you won’t be disappointed.
