When the idea of lasagna soup first came to me, it was because I wanted to make something that screamed lasagna without having to do all of the noodle work. You know, the boiling and moving and layering, and all the stuff. If I could skip that, and still have lasagna, I’d be golden.
So, here we are with a gluten free and dairy free lasagna soup that’s going to blow your mind. AND be mostly easy to make.
Also, I need you to know this: everyone RAVED about this soup.
Do I Need a Dutch Oven?
Yes, you’re going to need a Dutch Oven to make this the way that I did. Alternatively, a large oven safe pot could also work. Know that I’ve Tested this in a pressure cooker and it absolutely does not work.

**Most gluten free lasagna noodles are rice based. If you can’t have rice, you can use a noodle that’s safe. It won’t quite be the same, but I think you’ll still enjoy the final result.
