If you’ve never heard of Pears Belle Helene, look up the original (chocolate, pears, pastry). It’s a very old classic desert that I learned about a few months ago. After watching a Michelin Star chef make a version, my mind went straight to making a free from option.
Now, is this the classic? No. I’m not going to say that it is. However, I think it’s a nod to the classic using ingredients that the free-from community has access to (and ingredients I can touch). Take a look at this and if you make it, let me know.
