It’s summer and you know what that means: Ice Cream!! OK, truth is, we eat it year round at our house, but for some of you, summer is a special time just right for ice cream galore. Today’s corn free lemon ice cream recipe is just so right in so many ways. It’s sweet, it’s tart, it’s got a nice lemon punch… This lemon ice cream recipe is also super easy to make. Fun fact: we only share vegan ice cream recipes, meaning so many people can enjoy this together.
Why only vegan ice cream? Given the severe dairy allergy in our home, we find it’s best to keep our ice cream machine free from dairy. Besides, there are so many dairy-based ice creams available in stores. We want to have a challenge each time we create an allergy friendly ice cream recipe. (If I knew how to add an emoji, it would be the arm flexing one)
For Corn Free People
I’ve been able to source corn free lemons for a while now, and that has opened up a whole new line of recipes for us. If you don’t live with a corn allergy, I’m so happy for you. If you do, make sure you know about the growing conditions, cleaning agents, and if any waxes are being used on your fruit. If you’re not corn free, you can still make this tasty vegan ice cream recipe by using the brands of each ingredient that are safe for you.
Why We All NEED An Ice Cream Maker
Now, I can’t stress this enough: if you don’t have an ice cream maker, now is the time to invest. If you live with multiple food allergies, you’ll want to have the ability to be self sufficient. An ice cream maker at home gives you access to clean and dedicated equipment, as well as ANY flavor you can dream up. I’d also suggest an ice cream maker to any of you living with multiple and severe food allergies.
Manufacturers can change their process, ingredient sources, etc. at any time, and they don’t have to write you a letter to inform you. We’ve been thru this SO many times that we find it “easier” to just make as much from scratch as possible. Is it time consuming? Absolutely. Is it liberating: totally.
