Mashed Potato Zucchini Boats (Gluten Free, Vegan, Top 8 Free)

Ingredients

Part 1

  • 900 g Organic Potatoes (32 ounces) cubed, red and gold varieties are great, we used the Viking variety
  • Organic Zucchini, Several medium to large in size

Part 2

  • 110 mL Milk of Choice (4 ounces)
  • 8 TBSP Butter/Fat of Choice
  • 2 tsp Organic Onion Granules
  • 1 tsp Sea Salt
  • 1/2 TBSP Organic Garlic minced/finely chopped
