Hot Sushi (Gluten Free, Vegan, Top 8 Free, Corn Free)

Ingredients
- 230 g Organic Brown Mushrooms (8 ounces) roughly chopped
- 460 g Organic Green Cabbage (16 ounces)
- 370 g Organic Purple/Red Onion (13 ounces) sliced
- 10 TBSP Oil of Choice for Cooking I used Extra Virgin Olive Oil
- 1.5 tsp Sea Salt
- 1.5 tsp Organic Garlic chopped/finely minced

- Cooked Organic Sushi Rice I use Lundberg Organic, and I pre-seasoned it a tad
- Nori Sheets there are a lot of good brands out there in mainly two sizes
- Micro Greens optional
- Mirin this is the one I use from Eden
- Little Bit of Water explained in the video
Optional Dipping Sauce
- 120 g Mayo of Choice (4.3 ounces) I used Follow Your Heart
- 1/4 tsp Sea Salt
- 1/4 - 1/2 tsp Organic Ground Ginger I used Spicely Organics
- 6 drops Liquid Smoke I use Lazy Kettle Brand
- 55 mL Organic Maple Syrup (almost 2 ounces)
