Gluten Free, Egg Free Carrot Banana Muffins (Vegan, Top 8 Free)

Ingredients

Part 1

  • 400 g Organic Bananas broken into 4 - 5 pieces (see picture)
  • 250 g Organic Carrots shredded
  • 200 mL Milk of Choice
  • 120 mL Organic Extra Virgin Olive Oil
  • 1 TBSP Organic Vanilla Extract

Part 2

  • 200 g Sorghum Flour, superfine
  • 170 g Organic Maple Sugar
  • 140 g Tiger Nut Flour (tuber, NOT a nut) OR Organic GF PP Oat Flour (glutenfreeoats.com)
  • 35 g Arrowroot
  • 4 tsp Baking Powder
  • 3 tsp Organic Ground Cinnamon
  • 1 tsp Sea Salt
  • 1/2 tsp Organic Ground Nutmeg
  • 1/2 tsp Baking Soda
