Allium Free, Egg Free, Vegan Potato Salad (Top 8 Free)

Ingredients

Part 1

  • 1 KG Organic Red Potatoes (36 ounces), medium cube, skin on
  • Water
  • 5 tsp Sea Salt for boiling water

Part 2

  • 5 TBSP Oil of Choice for Cooking divided, see directions
  • 140 g Organic Carrots shredded, we used yellow to create a visual pop
  • 50 g Organic Shishito Peppers sliced
  • 1 tsp Sea Salt

Part 3

  • 2 TBSP Organic Balsamic Vinegar
  • 60 mL Organic Maple Syrup

Part 4

  • 365 g Mayo of Choice we used Follow Your Heart Organic Egg Free Mayo
  • 3/4 tsp Sea Salt
  • Pinch Organic Black Pepper
