Easy Veggie Fried Rice (Egg Free, Vegan)

Ingredients

Part 1

  • 9 TBSP Dairy Free Butter or butter of choice
  • 335 g Organic Carrots (12 ounces), sliced

Optional

  • 1 - 2 tsp Organic Balsamic Vinegar

Part 2

  • 1/2 Organic Pineapple diced
  • 2 tsp Sea Salt

Part 3: Egg Scramble Ingredients

  • 1.5 TBSP Dairy Free Butter
  • 170 mL JUST Egg Substitute (6 ounces) it's OK to use more
  • Pinch Sea Salt

Part 4

  • 4 TBSP Organic Onion Granules
  • 2 TBSP Organic Maple Sugar
  • 2.5 tsp Organic Smoked Paprika
  • 1.5 tsp Organic Ground Ancho Chili

Optional

  • 225 g Organic Steamed Beets (8 ounces)
  • Organic Dried Chives for garnish

  • 900 g Cooked Organic Rice of Choice (32 ounces) cold/leftovers
  • 3 tsp Sea Salt as needed/to taste. Our rice was unsalted.
